Birds, Bees, Bread and Cheese
with Brenton Kelly and Jan Smith

July 13-15, 2012

Quail Springs Permaculture invites you to weekend food production
intensives focused on growing and processing your own food! From
understanding and engaging in the animal husbandry involved with
backyard poultry and butchering, to calling in a wild yeast, baking
sourdough bread in the earthen ovens, keeping bees, and making
cheeses, well honor, celebrate, and participate in the daily miracle
of food, and what it takes to bring it to the table.

Session 1 will cover an introduction to dairy goats, milking, and
basic cheese making, keeping bees with the top bar hive method,
backyard poultry for meat and eggs, as well as butchering. We will
make artisan sourdough bread, and learn the basics of earthen oven
cooking. The weekend is full, hands on, and we get going at5:30 in the
morning on Saturday, and 6am on Sunday.

The classes will be small in order to have plenty of hands-on time for
all participants, so please register early to hold your spot.

non-toxic land management and animal husbandry. He co-owned Island
Seed and Feed in Goleta for 10 years before joining the Quail Springs
team, and has taught many people about pastured poultry, bees, worms,
vegetables, and more.

Jan Smith has been a professional cook for over 30 years, and for the
last 10 years shes focused on growing the food she cooks. With that as
a guide shes worked in and then managed an organic orchard, a farm, a
